
Well my sourdough starter still is not behaving. I am losing hope it will ever be useable. I am over a week out and it still looks like a two to three day old. Due to this I am still discarding and feeding. I collected up a good bit of discard and decided to make crackers.
Sourdough discard crackers
400g sourdough starter
5g salt
4 tablespoons nutritional yeast
2 Tablespoons vegan butter
1 Tablespoon seasoning. (I used bbq seasoning but paprika or mixed herbs would be nice)
Mix all well. Pour onto a lined baking sheet. Sprinkle with sea salt. Bake for 30 min at about 150 C / 300 F. Cut into cracker size pieces and bake for another 25 minutes. Turn off the oven and let the crackers and oven cool together with the door slightly open.

These were so more-ish. The only change I would make its sea salt over the top just before going into the oven. I am going to have to try this with a few other seasonings. I would love to find a way to make these pizza flavoured.
Everyone that tried these came back for more. Next time I need to make much more. I don’t think these lasted more than about 10 minutes.
